View Full Version : Experimenting in the kitchen

Ok, so I like to dabble in the kitchen. Now I’m un-employed again I find most of my time in there again because it eats up the time nicely and lets me practise at making tasty food. Recently I was trying my hand at Potatoes Au Gratin (A layer of potato then a filling and another layer of potato and cheese on top) with varied success and today I am making something up on the fly. It’s pretty much a variation on Cottage or Shepherds’ Pie.

First I got some large-ish potatoes, peeled, cut and boiled them in salted water for about 35 minutes so they were cooked right through. Then I set about making the filling. For this I used sausage meat, onions and mushrooms fried in garlic and olive oil with a bit of subbed sage. I just cooked it until the sausage meat and the onions were nicely browned.

When the potatoes were done I set about making my mashed potato top. I love mash because you can add just what you want to it. I used some of the onion, English Mustard, honey, black pepper, milk, butter and cheese which I just threw in while mashing. Tasted preetee good.

I didn’t want the filling to just sit there, I wanted something to carry the flavour so it could all cook together so I quickly made about half a pint of cheese sauce.
Then I just whacked the filling in the bottom of a casserole dish with the sauce and spread it evenly then spooned the potato on top and smoothed it out, topped with some dill and just a sprinkle of paprika.

It’s in the oven now and without sounding boastful it smells goooooood! Just going to cook it until browned. You could put cheese on top but I have plenty in there already.

So now I just need to wait! I hope it tastes at least passable...

that sounds really good. im not a great cook. i can cook meat like theres no tomarrow. i know a few other things. but otherwise. i can't stand the kitchen. mainly cause i end up being the one to clean up after everything. so i'm glad you find it fun. and i hope you enjoy it.and that sounds good by the way. i have yet to eat today so your killing me.Ok, so I like to dabble in the kitchen. I got a bunch of kale the other day and I was like what the heck am I suppose to do with this so?

so...

I took the leaf part and drizzled them with olive oil lightly salted and peppered them then broiled them in the oven for about 5-10 minutes (till crispy) and made kale chips.... They where actually good... I was surprised.

Now important was I watched them to make sure they didn't get to crispy (Burnt) my first bit did get burnt, which wasn't too bad because well, the kale was given to me for free and I really didn't know what I was going to do with it.

SO there was my experimentation in the kitchen for today.
