View Full Version : Mexican Lasagna

1. 1 pound lean ground beef
2. 1/2 cup chopped onion
3. 1/2 cup chopped red pepper
4. 2 1/2 cups Thick 'N Chunky Salsa
5. 1 teaspoon chili powder
6. 1 teaspoon ground cumin
7. 12 (6 inch) hard corn tortillas, divided
8. 1 (16 ounce) container sour cream
10. 2 cup Shredded Sharp Cheddar Cheese and monterey jack
11. 1 (2.25 ounce) can small pitted ripe olives (green or black or both if you prefer), drained


2. Cooking Directions

1. Preheat oven to 375 degrees F. Brown meat in large skillet on medium heat; drain. Return meat to skillet. Add onions and peppers; cook until crisp-tender, stirring occasionally. Add salsa and seasonings; mix well.
2. Layer starting with crunchy tortillas in the bottom and add a layer of meat, cheese, sourcream then another tortilla, meat, cheese and sour cream and then top with remaining meat cheese and olives.
3. Bake 30 min. or until heated through.

Yield: 8 servings (Serving size: 8 servings)


Alternately you can skip the tortillas and just cook the layers and serve with Tortilla chips or soft corn tortillas for a taco dip or a make your own burrito dish. Add diced tomatoes on the side for the do it yourself burrito dish.

It's really yummy!

sounds very good will try, I wouldn't call it lasagna, lasagna involves noodles

Do you put it in a 9x9 or a 9x13 pan? Sounds like a great meal...I'll probably be making it as soon as I get over this illness! I haven't had anything Mexican for a long time.

I believe the dish is called lasagna because it contains layers, much like real lasagna.

I am so gonna have to try that. It sounds so good that my tummy is growling. Heh, and I'm starting to drool over thinking about it. Mmm, lasagna.
