They say that breakfast is the most important meal of the day (yay cliches). Having been a working woman for a year, I'll vouch for that. The truth though, is that I riginally didn't eat breakfast, I just had a handful of carrots (hey, vegetables, right?) and called it a meal. THEN I started a medication that required me to have food in my tummy when I took it. Long story short, I had to take the day off after 9AM (work starts at 730AM) because of the nausea. So I began thinking of healthy breakfasts that would stick with me since, yes we can snack, but it's sugary, high-calorie shite and I wanted to rather limit that. Here's one of my favorite breakfasts that my mother actually made up one morning.

It requires a previous mix of different things, mainly:
2-3 chopped peppers, any color (we usually use red and green)
Shredded carrots
Shredded red cabbage
Chopped cauliflower and broccoli
Chopped green onion
Beans optional: pinto, black, garbanzo, and kidney all work well.

WHen all mixed together, it fits into one of the huge Tupperware bowls. Trust me, it's worth it, because it's good and it LASTS. Provided you have the fridge space.

Anyway, take two cups of said veggie mix and combine it with 1 egg and 2 egg whites. Fry it like you're scrambling eggs. Combine it with 2 clementines/oranges and a glass of skim milk.

I ate it around 10AM and wasn't hungry until about 3.

There are more but that is my favorite. Does anyone else eat healthy/moderately healthy breakfasts that keep them full until the next meal?
