* 1 (2 1/2 to 3 lb) lean boneless beef chuck pot roast
* 1 large onion, chopped
* 1/4 cup Worcestershire sauce
* 1/2 teaspoon dried leaf oregano, crushed
* 1/2 teaspoon dried leaf basil, crushed
* 1/2 teaspoon dried leaf thyme, crushed
* 1 pk of dry italian dressing mix
* 2 cloves garlic, minced
* 1/2 cup chopped pepperoncini (Italian pickled peppers)
* 8 sandwich rolls, split and warmed
* 6 ounces sliced Cheddar or Mozzarella cheese, or Provelone (my favorite!)
In a 3 1/2- to 5-quart crockpot combine beef, onion, Worcestershire sauce, oregano, basil, thyme, italian dressing and garlic.
Cover; cook on low-heat setting for 10 hours or on high-heat for 5 to 6 hours.
Break up and shred meat. Stir in chopped pepperoncini. Cook, uncovered, on high-heat setting for 30 minutes more, stirring often to break up meat.
Using a slotted spoon, place meat mixture on the bottom half of sandwich rolls. Top each sandwich with cheese. (Optional: Broil sandwiches 4 inches from heat source for about 30 to 60 seconds, or until cheese melts.) Place top of rolls on sandwiches and serve.
Serves about 8 but when I make them for work people seem to scarf it down so I usually do a double batch.
